  1. Brown bacon over medium heat. Remove bacon and set aside.
  2. Pour off some of the bacon grease, leaving about 3 tablespoons.
  3. Cook the onions and garlic in the bacon grease until softened over medium heat.
  4. Add the chicken broth, tomatoes, and beans. Then add the seasonings: parsley, thyme, red pepper flakes, salt and pepper.
  5. Crumble or chop the bacon into small pieces. Add to the soup.
  6. Simmer for 2-3 hours, stirring occasionally.
Recipe Notes

This soup is great with some fresh spinach stirred in too. If the soup gets too thick while simmering, thin it with water to the desired consistency. If you want to top the soup with crispy bacon before serving, simply set aside some of the cooked bacon for garnishing rather than adding to the soup before simmering.
