I can’t believe it’s been over a month since I posted a recipe! Summer is flying by.
To be completely honest, I haven’t been cooking much. Moving to a new house, throwing birthday parties, and the summer heat have prevented me from spending a lot of time in the kitchen.
Plus our new place has an electric stove – a major deterrent for me. I need a gas cooktop ASAP!
Thank goodness this recipe doesn’t require a stove. And it’s perfect for summer because it’s easy and includes zucchini, one of my favorite summer vegetables. You will, unfortunately, have to turn on the oven to make this. (Okay, so nothing in life is absolutely perfect, but this does come pretty close…you really can’t go wrong with a pan of cheesy squash squares.)
Here’s what you’ll need for these quiche-like bites:
2 medium zucchini, unpeeled
1 medium onion
½ cup Parmesan cheese, grated
1 cup Bisquick baking mix
2 tablespoons fresh parsley or ½ teaspoon dried parsley
½ teaspoon dried oregano
½ teaspoon garlic powder
½ teaspoon pepper
½ teaspoon salt
½ cup vegetable oil
4 eggs, beaten
Preheat your oven to 350 degrees and grease a 9×13 pan.
Chop the onion and toss in a large bowl.
Thinly slice the zucchini. You’ll need a total of about 3 cups of sliced zucchini (but I always add more, because more is better). Toss the zucchini in the bowl with the onion.
Add the baking mix and the cheese to the bowl too.
Then add in the seasonings: parsley, oregano, garlic powder, pepper and salt.
Pour the vegetable oil into the bowl.
Gently fold everything together.
Once combined, spread the zucchini mixture evenly in the 9×13 pan.
Pop the pan in the oven and bake for about 30 to 40 minutes, until it’s golden brown and firm.
And that’s it. Simple, right?
I like my squash squares warm, but they’re also pretty tasty cold or at room temperature. Since they still taste good when they’re no longer piping hot, these squares are great to make for entertaining. So cut them into squares and serve ‘em up. Or keep them all for yourself. I won’t judge you if you do.
