Here’s a quick and easy recipe for a summer night with fresh bell peppers, kielbasa and whole grain pasta. It’s simple: saute the vegetables and kielbasa, cook the pasta, and mix it all together.
I like kielbasa, but if you don’t, feel free to use any cooked sausage or meat that you prefer. You can also add other veggies. I picked peppers and onions because they are a classic combination with sausage.
You’ll need:
2 green bell peppers
1 large onion
1 pound whole grain pasta
1 package kielbasa smoked sausage
1 can diced tomatoes with basil and garlic
Olive oil for cooking
First, boil water to cook the pasta.
While the water is coming to a boil, slice the peppers.
And the onion too.
Once the water is boiling, add the pasta and cook until al dente.
Meanwhile, slice the kielbasa.
Heat a couple tablespoons of olive oil in a saute pan. Cook the peppers and onions over high heat. When they’ve softened a bit, add in the kielbasa. Saute until the veggies and kielbasa have nicely browned. Yum. If you want to make this dish extra fancy, you can add a few splashes of wine or a couple generous dabs of butter.
Drain the pasta once it’s cooked. Add the diced tomatoes, undrained, to the pasta.
Then add the cooked peppers, onions and kielbasa to the pasta. Mix everything together.
And that’s it. Seriously. The only thing left to do is eat. So grab a fork and dig in!
I will make this. I usually make the Kielbasa with the onions, peppers, and sliced potatoes. I never thought of the pasta and tomatoes. Great idea.
