Bunny Corn Snack Mix (aka White Trash)

For Easter, I made a version of the always delicious white chocolate snack mix commonly known as “white trash.” Here’s the recipe, but feel free to change it up with whatever you like. Just about anything tastes good coated in white chocolate, so don’t be afraid to be creative with the ingredients.

One bag of white chocolate chips (12 oz)
4 cups of corn or rice chex cereal
2 cups of pretzel sticks, broken up into smaller pieces
3/4 cup of dried cranberries (raisins or any other dried fruit would also work)
1 cup of bunny corn (the Easter version of candy corn)
1/2 cup of jimmies (also known as sprinkles, for those people who aren’t from South Jersey)

Mix together the cereal, pretzels, cranberries, bunny corn, and jimmies in a large bowl.


It’s a shame bunny corn is so hard to find. I searched high and low for it this Easter season, checking every grocery store, Target, Walmart and pharmacy within a 20 mile radius of my house. I was about to give up, but, oddly enough, I found some at Michael’s, the craft store. You can substitute the bunny corn with regular candy corn to make a fall or Halloween version of this snack mix or you can use other candy like M&M’s or Reese’s Pieces.


Don’t leave out the jimmies! They add an extra crunch and some color. I found these Easter jimmies at Wegmans, which always has a special jimmy mix for every holiday.

After combining everything but the chocolate, melt the white chocolate chips, being careful not to overheat and burn them. Pour the melted chocolate over the snack mix. Quickly but gently combine everything together until the white chocolate evenly coats the mixture. Then spread the mix on wax paper and let the chocolate set. Once it’s dry and set, break the large chunks of the mixture into pieces and serve! Store the mixture in an airtight container or bag, if you have the self-control to keep yourself from eating it all immediately.
