Once you try this recipe, you’re going to be peeved that I didn’t share it with you sooner.
I admit that I didn’t really want to share it. I enjoyed being the only person among my family and friends who knew how to whip up this delicious treat.
But after the millionth request for me to make it again, I’m ready for others to be able to make it themselves. This sweet combination of toffee and chocolate gets devoured so quickly, one person alone can’t handle the demand.
So here you go. The recipe you didn’t know you’ve been waiting your whole life for. Consider it a gift from me to you.
WARNING – Cracker Toffee is highly addictive so proceed with caution. Do not eat this while alone because you will consume the entire batch by yourself.
What you’ll need to make Cracker Toffee:
40 saltine crackers (or enough to line a jelly roll pan)
1 cup unsalted butter
1 cup packed brown sugar
2 cups of milk chocolate or semisweet chocolate chips
This recipe is super easy and fast, perfect if you have an infant that doesn’t sleep longer than 20 minutes at a time during the day.
First, preheat your oven to 400 degrees. Line a jelly roll pan with the saltine crackers in a single layer. If you want to switch things up, you can use graham crackers instead of saltine crackers.
In a small pot, combine the brown sugar and butter and bring to a boil.
Once it comes to a boil, continue boiling for 3 minutes. Mixture will be a deep caramel color.
Immediately pour over saltines and spread to cover crackers completely.
Then bake at 400 degrees for 5 to 6 minutes. It will be all bubbly. Remove from oven and sprinkle chocolate chips over the top and let sit for a couple of minutes so the chips can melt.
Aaaahhhh…melting chips.
Then spread the melted chips to evenly cover the top.
Yummy. This really is crack in a pan.
Cool completely (or put in the fridge for a few minutes) and break into pieces. Then hide it from your hungry husband so you have it all to yourself.
If you’re a nut person, feel free to sprinkle chopped pecans or walnuts over the chocolate before it cools. Or scatter some shredded coconut or jimmies on the top to make it look festive.
