Here’s an easy recipe for BBQ pulled chicken, just in time for summer! It’s much like the classic pork BBQ…perfect summer fare, in my opinion. Plus, all you have to do is plop everything in the slow cooker, then go and enjoy your day at the beach (if you happen to be near a beach).
So let’s get to it, so you can enjoy your summer in the sun far from the kitchen. You’ll need:
4 boneless, skinless chicken breasts
1 medium onion, sliced
1 1/2 cups ketchup
3 tablespoons brown sugar
1 1/2 tablespoon Worcestershire sauce
1 tablespoon soy sauce
2 tablespoon apple cider vinegar
4 garlic cloves, minced
1 teaspoon crushed red pepper flakes
1/4 cup bottled barbecue sauce
1/4 cup honey
Add the ingredients to the crockpot.
The garlic…
The ketchup…
Your favorite store-bought barbecue sauce…
Brown sugar…
The Worcestershire, vinegar, and soy sauce…
Give it some zing with the crushed red pepper…
And a little more sweetness with honey…
Mix everything until combined in the slow cooker.
Then add the onions and chicken breasts. With a spoon, toss them with the sauce so the chicken is coated/covered.
Then put the lid on the slow cooker. If you want to eat 8 hours later, turn it on low. If you want to eat it 4 hours later, turn it on high.
And that’s it! Seriously, that’s it. This is what you get in a few hours:
I like my BBQ simple, served in a soft bun. This may be better than a grilled burger (but maybe not…my burgers are pretty darn good).
This barbecue is juicy, so be prepared for a messy sandwich. But it IS picnic food. Messy is totally acceptable, if not preferred.
