Have you ever had a meringue cookie? They are like sweet little clouds that melt in your mouth. I thought they’d make the perfect cookie for Easter to go along with fresh fruit and other dessert goodies. And to make them extra special for Easter, I decided to shape them like bunnies. BUNNY MERINGUES. Brilliant, right?

These bunny meringue cookies came out so cute. Almost too cute to eat. Almost. After one bite, I did not feel bad eating a dozen bunnies. (And, yes, it is totally possible to eat a dozen at one time because these cookies are so light. It’s basically like eating air. Air that tastes sweet and yummy.)

When you hear the word “meringue,” you may think raw egg whites, lemon pie, or fancy macaroon cookies. All of these things may be intimidating. But basic meringues are actually very easy to make, especially if you have a stand mixer. So hop to it and make these adorable treats!

You’ll need:
4 egg whites
1 cup sugar
1/4 teaspoon cream of tartar
1/4 teaspoon vanilla extract
1/4 teaspoon salt

You’ll also need a gallon plastic bag to pipe the meringues into bunny shapes and about a quarter cup of chocolate chips.

To begin, preheat your oven to 225 degrees. These cookies need to be baked low and slow.

Put the egg whites, cream of tartar, vanilla, and salt in a mixing bowl. (Warm eggs whip better than cold eggs, but cold eggs are easier to separate. So I recommend separating the eggs while they’re cold and then letting the egg whites sit at room temperature for a little while before mixing up the meringues.)

Beat the egg white mixture until soft peaks form. It should take a couple minutes.

Then slowly add in the sugar, a tablespoon at a time, while continuing to whisk the egg white mixture. It should take a minute or two to add the sugar and the mixture will form stiff, shiny peaks.

Line baking sheets with parchment paper. Gently spoon the meringue mixture into the gallon plastic bag. Cut a 1/2 inch off one of the corners of the bag to make it into a piping bag.

On the parchment paper, pipe the meringue mixture into the shape of a bunny head – two ears and a round head. Make them as small or as large as you’d like. They don’t need to be perfect, since they’re supposed to be fluffy bunnies.

Once you’ve piped all of the meringue mixture into bunnies, pop them in the oven. Bake them for about an hour and a half, until they are dry and a little bit golden.

Let the meringue cookies cool completely on the baking sheets. Once they are cool, melt the chocolate chips in a small bowl in the microwave. Using a toothpick, dab melted chocolate on each cookie to make dots for eyes and a nose.
